Is it really Chinese? Essentially it is neither Chinese nor Indian, but Indo-Chinese, which is a separate cuisine by itself. It is an adapted version with more Indian ingredients to suit the local food preferences and taste buds.
Chinese Indian food is generally characterised by its ingredients: Indian vegetables and spices are used, along with a heavy amount of pungent Chinese sauces, thickening agents, and oil. Stir-fried in a wok, Indo-Chinese food takes Chinese culinary styles and adds spices and flavours familiar to the Indian palate.
The cuisine’s popularity can be attributed to the creation of food with familiar flavours/sensations but prepared in an entirely different way. The versatility of the ingredients meant that Indo-Chinese dishes were easily adapted to the large vegetarian population.
A man named Nelson Wang, the son of Chinese immigrants in Kolkata, is most often credited with its creation. The story goes that Wang ended up in Bombay in the 1970s, working as an assistant cook at another Taj restaurant, Frederick’s.
It is the most famous Chinese food available in India. It is a winner across the board of all the dishes served in the Indian subcontinent. The Chinese prepare it by steaming rice with vegetables or meat, while in India we get a spicy and greasy version of it.

Honey is something of an outlier – It does not spoil or expires over time. Samples of Honey found in Ancient Egyptian tombs which are dated back to 3000 years and were perfectly edible(*supposedly). What is it in Honey that gives it such an unusual property?
 The answer lies with the Bees’ stomach and their wings. Honey bees extract nectar from flowers to make Honey, this nectar has the same chemical property of a processed sugar i.e., this nectar is pure sucrose.
 Honey bees store this nectar in their stomach and break it down into glucose and fructose and deposit this nectar Honey on Bee combs. At this stage, there is still some % of sucrose in the Honey and which cannot be further broken down.
 This Honey, which is now on bee combs, has 70% water in it, honey bees keep fanning the bee combs with their wings to reduce the water content to as low as 17%.
This lowered water activity in Honey makes it impossible for any bacteria or fungi to develop on it, which reduces the chances of honey spoil to a minimum.
Another factor that prevents Honey from spoiling is its PH value, which is around 4: What it means is Honey is an acidic food packed with components like formic acid, citric acid, and the dominant gluconic acid. This acidic property of Honey further prevents any bacteria growth in Raw Honey as bacteria thrive in neutral rather than acidic conditions.
The whole breaking down of nectar and fanning to remove water takes place in 1-3 days.
 One final point: You must have noticed that over time honey starts to crystalize and solidify: This happens because the 17% water further evaporates. The crystallization of honey is a natural process, and it does occur in some of the types of Honey.

Raw honey has very less water content in it, and it is very common that honey in your jar that you have bought recently starts to crystalize after a few months or even weeks of purchase.

This crystallization of honey also varies from product to product and will not be applicable to all honey types.Â
 You can follow the below technique to decrystallize it:
·        Boil water in a bowl
·        Place your Honey Jar in the bowl.
·        Stir the honey slowly.Â
·        Keep it for 10 minutes or so in the bowl, and you will notice that the honey starts to decrystallize.

Best before: How long will Raw Honey last?
The shelf life of honey is difficult to determine due to a number of factors. Some cannot even give a precise expiration date, while others simply write a bit in the manual accompanying their product.
Since honey does not contain any preservatives, its quality decreases over time; however, how much time can vary from one type to another and even between batches from the same source.
There are several factors that contribute to this degradation process:
1- Natural enzymes (invertase/diastase) found in honey break down sucrose into glucose and fructose over time.
2 – Moisture levels increase which promotes microbial growth.
3 – Proteins contained within the liquid form become irreversibly insoluble.
4 – Its flavour is influenced by the types of plants found in the vicinity of a bee hive, which vary from one region to another. The delicate balance between these different elements determines how long a jar will last.
In general, it could be said that honey has a shorter shelf life than its expiration date suggests. If taken into consideration all above factors and going off common sense, we can say that an opened jar shouldn’t last more than two years at room temperature.

Raw(unpasteurized) honey is the only type of honey that hasn’t been over-processed and radically altered from its original state. After being harvested, it’s not filtered or heated excessively to remove bacteria, hence why it goes bad faster than commercialized brands. However, if stored properly, raw honey can last up to a year which makes you wonder: “Can raw honey go bad?”
Here are some helpful hints on how to keep your raw honey fresh and prevent it from going bad too quickly:
Keep It Cool – Certain enzymes in raw honey will become active at higher temperatures and cause fermentation. To slow down this process, store your jar in a cool area such as a pantry away from direct sunlight. Avoid keeping the jar in the fridge as this may also speed up fermentation.
Store it Sealed – Do not leave open jars exposed to air, as it can allow moisture and bacteria into your jar of honey. A sealed jar will prevent any harmful agents from entering the container and help keep your honey fresh for longer.
Use a Clean utensil to Scoop Out Your Honey – Make sure the utensil you use is clean and never double dip back into the jar so any bacteria on the utensil doesn’t get mixed with your fresh batch of raw honey. Never pour out large amounts of honey at once as this might expose your product to too much air which may cause fermentation faster than normal if stored improperly. If you use a utensil to scoop out your honey, the chances of you getting any bacteria in there is much less than if you were to tip the jar and use your fingers which we don’t recommend.
Store it in Glass – If possible, avoid storing your honey in plastic containers as this may cause degradation and affect its taste and consistency over time. Although some suppliers claim that their product will stay fresh for years, there are no long-term studies on this so think twice before buying big commercial-sized packages of raw honey. Honey is very susceptible to absorbing flavors from other items near it so keep it away from strong smelling foods such as garlic or onions if you want to maintain its smell and taste over time.
Check for Signs of Fermentation – If you see any signs of fermentation such as if your honey or taste has changed, it’s probably best to discard the batch and start over with a new one. But remember! Just because your batch may have gone bad doesn’t mean it’s unsafe to consume so don’t throw away the whole jar just yet. Although raw honey goes bad over time, if processed correctly and stored properly, it can last up to a year which is why we always recommend buying small amounts of raw honey at a time instead of big commercial sized jars that tend to lose flavour over time and may not be worth it for those who like cooking or baking with lots of different flavoured honey.

Raw honey is raw, unpasteurized honey that hasn’t been heated over 60°C. And raw doesn’t just mean raw in temperature, it also means raw by activity – raw honey has the enzymes of the bee’s body still intact, which are necessary for flora-friendly digestion.
Raw can also be distinguished from pasteurized or filtered honey by its appearance: raw honey tends to separate into layers of creamed nectar with thousands of tiny bubbles throughout. This happens because raw honey contains small amounts of bee pollen grains and wax particles that can serve as food for naturally occurring yeasts (which help to naturally ferment the sugars). As a result, there may be some natural yeast fermentation taking place within the plastic raw honey jar.
Raw honey does not mean raw in healthfulness: raw commercial honey can, and do, contain residues of pesticides used on the bees and wax.
